Can you set a default task type?

Yes. In the Project Options > Duration tab you an set the default Task Type. If you do not manually change this default setting, the Task Type is set to Fixed Units.

By default, RiskyProject has Fixed Units set as the Task Type. Is there a reason for this?

Fixed Units is probably the best task type for schedule risk analysis because of the manner in how task types are used to recalculate Work, Units, or Duration. In Monte Carlo simulations, we are measuring how changes to task durations can not only affect project duration and finish time, but also how the amount of effort (hours of work) and therefore resource costs these variances could cause. Therefore using Fixed Work or Fixed Duration would not allow you to simulate the results that you require. Fixed Work would not allow you to measure the variance in time dependent costs and Fixed Duration would not allow you to measure the variance in task and project durations and finish times.
